It is never a big concern for you as most of the service providers are offering you the facility of sending messages on who called you when the flight mode is switched off. As soon as you switch the airplane mode off and get connected with the network, you will get an SMS giving details on who had called you.
The airplane mode has to be switched on for the complete flight duration. You can switch it back on as soon as the flight lands at the destination. If you aren’t on a flight and decided to keep the phone on this mode for any personal reasons, you will be able to get missed call information whenever you get the mode off.
